Jacqui McPeake

‘Allergens and The Allergen Accreditation Scheme’

Jacqui’s presentation will cover the Allergen Accreditation Scheme and the benefits of the scheme for food business owners.  

Jacqui McPeake has worked in the catering industry for over 30 years, predominantly in the HE sectors. Jacqui worked at Manchester Metropolitan University for 20 years and has extensive skills and knowledge of soft facilities management. Jacqui’s career included working as a catering manager, 5 years as a facilities manager and 9 years as head of catering at Manchester Metropolitan University. Jacqui led her catering team through major changes which resulted in reducing a significant deficit figure into a modest surplus, 1 year ahead of the target. Jacqui was passionate about ensuring that her team were at the forefront of leading best practice in universities for allergen management. Jacqui also worked with TUCO on a project to introduce a Code of Practice for Allergen Management. Jacqui also led her team to win the Cost Sector Team of the Year 2017 for their work on allergen management and improving the free-from offers for students with food allergies. Last year, Jacqui was awarded the FreeFrom Hero Award 2018. Jacqui McPeake now runs her own business as an allergen and catering management specialist (JACS Ltd) and also as a senior allergen advisor for Allergen Accreditation.


Peter Wareing 

‘Food Fraud: The Nuts and Bolts’ 

Peter Wareing is an independent expert witness for civil and criminal courts, and a food safety consultant in HACCP, risk assessment, theoretical validations and microbiological troubleshooting, with a particular focus on mycological issues. His specialist product areas are in the microbiology of soft drinks, sauces and dressings, bakery products and dried foods. As a member of the Society for Applied Microbiology and a Fellow of the Institute of Food Science and Technology, Peter has over 30 years’ experience working in food and agricultural research and development. His work has taken him as far as Africa, Asia and South America.


Lunch and refreshments will be provided during the day, with an opportunity to network with other professionals in your area after the event.


Attendance at this event will entitle you to 4 CPD points.

2. If you notify us of your cancellation more than 2 weeks prior to the event then we will provide a full refund or transfer your booking to an alternative Highfield event.

3. If you notify us of your cancellation less than 2 weeks prior to the event then the full cost will be payable.

4. Where you have booked a place at an event and do not attend then the full event cost will be payable.
